How to root smartphone?

I have. I used to help people flash ROMs. So have done almost everything that comes in between.

By default, the phone software is partly locked. So that you cannot accidently tamper with some important settings that will damage the function of the phone. In some cases, the manufacturers choose to lock certain areas or functions making sure that you will not be able to override their preference. Rooting gives you complete control over what you can do on your phone.
 
I have, gives you complete control of the phone which you can install any phone OS and stuff you want on it. Though phones are more open these days than they used to be, so I don't bother with it anymore.
Does rooting your smartphone makes it impossible for your device to be tracked or spied on in any way? The whole process is still a little bit confusing for me.
